Preserving the Summer: Celebrating the Bounty of the Hudson Valley
Description
This event will take place on August 7th, 2010 at the Culinary Institute of America's Campus in Hyde Park, NY. The reception will begin at 6 pm on Anton Plaza, where passed hors d’oeuvres and specialty cocktails, showcasing local Hudson Valley products, will be served, and guests will have the opportunity to participate in a silent auction. At 7 pm, a four-course dinner with beer and wine pairings will be served in Farquharson Hall. Entertainment will be provided throughout the evening by Mama Tried, a six-piece rock-inspired bluegrass band from Poughkeepsie. All proceeds of this charity event will benefit the Food Bank of the Hudson Valley, and the Peter Lenich Memorial Scholarship. The menu for this event is listed below. Small Tastes of the Hudson Valley: Cherry Tomatoes Smoked Sturgeon, Avocado-Radish Dressing Sweet Summer Corn Gallette Honey Chantilly Compressed Summer Melons Lemon Thyme Oil Fromage Blanc Smoked Duck Crostini, Nectarine Chutney Thin Sliced Baby Beets Goat Cheese, Shallot-Walnut Vinaigrette, Filo First Course: Chilled Summer Corn Bisque* Brown Butter Corn Custard, Roasted Fresno Peppers *Vegetarian & Gluten Free Second Course: Carpaccio of Assorted Summer Melons Wild Arugula, Citrus Vinaigrette Thin Sliced Summer Tomatoes Seasonal Greens, White Balsamic Vinaigrette Third Course: Bourbon-Peach Lacquered Pork Spareribs Peach-Jalapeno Chutney Honey-Seyval Dijon Mustard Glazed Chicken Young Herbs Vegetarian & Gluten Free Items Available Side Dishes: Fingerling Potato Salad Pancetta, Mustard Dressing Braised Collards and Kale Shaved Tasso Ham Summer Bean and Squash Succotash Toasted Hazelnuts Dessert: Peach and Honey Upside Down Cake Sweet Corn Ice Cream, Salted Caramel Sauce, Kettle Corn Second and Third courses are served family style.
