Dassai Blue is an exciting new sake brewery and tasting room in Hyde Park, New York, marking the U.S. debut of the famous Japanese sake brand Asahi Shuzo! It passionately crafts premium Junmai Daiginjo sake with New York water and high-quality Yamada Nishiki rice, aiming to meet or exceed Japanese standards.
Located in a beautifully renovated former grocery store near the Hudson River, the brewery blends tradition and innovation. Designed in collaboration between Japanese and American architects, it features authentic Japanese elements such as Yakisugi charred cedar siding and an Engawa covered corridor, complemented by sleek modern touches. The site also includes a dedicated rice-polishing facility and scenic grounds with cherry trees.
Dassai Blue skillfully combines artisanal craftsmanship with advanced technology, employing a team-based approach instead of relying solely on a traditional toji (brewmaster). Visitors can tour the facility and observe the production process—covering rice washing, koji making, fermentation, and bottling—through large viewing windows.

Tastings include a flight of Dassai Blue sakes (such as Type 50, Type 35, and Type 23, named after their rice polishing ratios), served in wine glasses to enhance aroma and flavor. They can be paired with small bites, such as cheese plates or fresh sushi. The lively tasting room also offers light snacks, and on weekends, guests can enjoy freshly made sushi from Chef Tetsu Honda.
