This is because raw milk cheeses have all the good bacteria found naturally in milk and none of the bad.

The key to great cheese is excellent milk, and at 5 Spoke Creamery, all of their cheeses are handmade in the farmstead tradition, produced on-site with a closed herd from the raw milk of grass-fed cows. Their milk comes from Holstein cows, free of pesticides and hormones. They start by milking the cows at 4:00 A.M. and making the cheese at 9:00 A.M. This ensures that their cheeses are produced with the freshest milk possible, resulting in top-quality products that showcase the essence of their carefully selected ingredients.
